Ingredients
  

Cake Batter

  • 1.5 cups sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 large eggs
  • 1 can (20 oz.) crushed pineapples with juice
  • 1 cup brown sugar
  • 1 cup pecans chopped

Icing

  • 1 cup evaporated milk
  • 0.5 cup sugar
  • 0.5 cup (1 stick) unsalted butter
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large mixing bowl, combine sugar, flour, baking soda, and salt.
  • Beat in eggs until mixture is smooth.
  • Stir in crushed pineapples with juice, brown sugar, and chopped pecans until well blended.
  • Pour batter into the prepared pan and spread evenly.
  • Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
  • While the cake is baking, prepare the icing. In a saucepan, combine evaporated milk, sugar, and butter.
  • Cook over medium heat, stirring constantly, until the mixture comes to a boil. Boil gently for 3 minutes, stirring constantly.
  • Remove from heat and stir in vanilla.
  • Immediately pour the hot icing over the warm cake, spreading evenly.
  • Allow the cake to cool completely before serving.

Notes

Use fresh chopped pecans for a crunchier texture and richer flavor. Pour the icing while the cake is still hot to allow it to soak in and create a moist, buttery finish.
