Ingredients
  

  • 2 cups pecans toasted and finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup brown sugar packed
  • 1/2 tsp salt
  • 2 tbsp maple syrup
  • 1/4 cup bourbon or apple juice
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips melted for dipping

Instructions
 

  • In a large bowl, combine chopped pecans, graham cracker crumbs, brown sugar, and salt until well mixed.
  • Stir in maple syrup, bourbon (or apple juice), and vanilla extract until the mixture forms a thick, dough-like consistency.
  • Roll the mixture into small balls, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  • Refrigerate for 30 minutes to firm up before dipping.
  • Dip each ball into melted chocolate, turning until fully coated. Place back on parchment paper and let sit until the chocolate hardens.
  • Once the chocolate is set, serve and enjoy your no-bake Pecan Pie Balls!

Notes

For extra crunch, reserve a few chopped pecans and sprinkle them over the chocolate before it hardens. These Pecan Pie Balls store well in the fridge for up to a week or in the freezer for longer. Substitute dark chocolate for a richer flavor or white chocolate for a sweeter twist!
