Ingredients
  

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 12 vanilla wafer cookies for crust
  • 2 tbsp melted butter for crust

Strawberry Crunch Topping

  • 20 golden Oreos, crushed
  • 3 tbsp strawberry gelatin powder
  • 4 tbsp unsalted butter, melted

Instructions
 

  • Preheat oven to 325°F (163°C) and line a muffin tin with paper liners.
  • Crush vanilla wafers and mix with melted butter. Press about 1 tablespoon of the mixture into the bottom of each liner to form the crust.
  • In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until combined.
  • Spoon cheesecake batter evenly over the crusts in the muffin tin.
  • Bake for 18–20 minutes, or until centers are set. Let them cool completely, then refrigerate for at least 2 hours.
  • For the topping, mix crushed Oreos, strawberry gelatin powder, and melted butter until crumbly.
  • Once cheesecakes are chilled, sprinkle and press the strawberry crunch topping over each bite.

Notes

For an extra strawberry burst, drizzle strawberry sauce over the bites before serving. Store leftovers in the refrigerator for up to 5 days.
