Ingredients
  

  • 2 large apples peeled, cored, and diced
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup chopped walnuts optional
  • 1/4 cup milk dairy or plant-based

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease four small oven-safe bowls or ramekins.
  • In a large mixing bowl, combine the cottage cheese, rolled oats, honey or maple syrup, cinnamon, vanilla extract, and salt. Mix well.
  • Crack the eggs into the mixture and whisk until fully incorporated.
  • Stir in the diced apples and milk until evenly distributed.
  • Divide the mixture evenly among the prepared bowls.
  • Sprinkle chopped walnuts on top if using.
  • Place the bowls on a baking sheet and bake for 25–30 minutes, or until the tops are golden and the mixture is set.
  • Let cool slightly before serving. Enjoy warm for a cozy breakfast.

Notes

Use tart apples like Granny Smith for a balance of sweetness and tang. Serve with a drizzle of extra honey or a dollop of Greek yogurt for added creaminess.
