Instructions
 

Prepare Ice Cream Base

  • In a mixing bowl, mash ripe bananas until smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • In another bowl, mix the sweetened condensed milk and vanilla extract together.
  • Gently fold the whipped cream into the condensed milk mixture.
  • Add the mashed bananas, crushed vanilla wafers, and beaten egg yolks into the mixture.

Layer and Freeze

  • In a freezer-safe container, layer the ice cream mixture with dollops of banana pudding and crushed vanilla wafers.
  • Cover the container and freeze for at least 6 hours or until firm.

Notes

Store in an airtight container. Place plastic wrap on the surface of the ice cream to reduce air exposure and consume within 2 weeks for best flavor.
