  • 1 cup granulated sugar

  • 0.5 tsp baking powder
  • 0.25 tsp salt

Instructions
 

  • In a large bowl, beat the softened butter and granulated sugar until light and fluffy (3–4 minutes).
  • Mix in the egg and vanilla extract until well combined (1–2 minutes).
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture (2–3 minutes).
  • Fold in the rainbow sprinkles gently using a spatula (1 minute).
  • Scoop dough into 1.5 tbsp-sized balls, roll in extra sprinkles, and place on a lined baking sheet (3 minutes).
  • Preheat oven to 350°F (175°C). Bake for 10–12 minutes until the edges are set and the centers are soft.
  • Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
