Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Make sure your butter is softened but not melted.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs You can use a flaxseed meal as a substitute if needed.
  • 1 cup all-purpose flour
  • 1 cup rolled oats Rolled oats work perfectly for a lovely chewy texture.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans Feel free to swap them out for walnuts or chocolate chips.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  • Beat in the eggs one by one, then stir in the vanilla extract.
  • In another bowl, mix the flour, oats, baking soda, and salt together.
  • Gradually stir the dry ingredients into the wet mixture until combined.
  • Gently fold in the chopped pecans.
  • Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space for spreading.

Baking

  • Bake for 10-12 minutes or until the edges are golden brown.
  • Let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

These cookies can be served warm with ice cream or paired with milk or tea. Store leftovers in an airtight container for up to a week, or freeze for longer storage. Consider adding dried cranberries or chocolate chips for a twist.
