Sweet Potato Base

  • 2 cups sweet potatoes peeled and cubed
  • 1 cup brown sugar packed
  • 1/2 cup pecans chopped
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tbsp vanilla extract

Batter

  • 1 cup milk
  • 1/2 cup butter melted
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 cup granulated sugar

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a baking dish.
  • In a medium pot, bring water to a boil and add cubed sweet potatoes. Cook for about 15 minutes until tender. Drain and mash until smooth.
  • In a large mixing bowl, combine mashed sweet potatoes with brown sugar, pecans, cinnamon, nutmeg, salt, and vanilla extract. Mix well until blended.
  • In another bowl, whisk together milk, melted butter, flour, baking powder, and granulated sugar until smooth.
  • Pour the sweet potato mixture evenly into the greased baking dish.
  • Gently pour the batter over the sweet potato layer, spreading evenly to cover.
  • Slowly pour the water over the top without stirring. This helps create the cobbler texture as it bakes.
  • Bake for 45–50 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  • Let it cool for about 10 minutes before serving. Enjoy warm, optionally topped with vanilla ice cream!
