Ingredients
  

For the Bread

  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 1 cup light brown sugar packed
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon
  • 1 cup whole milk or buttermilk for extra richness
  • 1 1/2 cups chopped pecans toasted

Optional Sweet Topping

  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup chopped pecans

Instructions
 

  • Preheat oven to 325°F (163°C). Grease and flour two 9x5-inch loaf pans or one bundt pan. Toast chopped pecans in a skillet over medium heat for 3–5 minutes until fragrant. Set aside to cool.
  • In a mixing bowl, cream butter, granulated sugar, and brown sugar until light and fluffy, about 4–5 minutes. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually add the dry mixture to the wet ingredients, alternating with milk. Begin and end with flour mixture. Fold in toasted pecans.
  • If using, mix brown sugar, cinnamon, and chopped pecans for the topping. Sprinkle over the top of the batter for added crunch and sweetness.
  • Pour batter evenly into prepared pan(s). Bake for 60–70 minutes for loaves, or 70–80 minutes for a bundt, until a toothpick inserted into the center comes out clean.
  • Let the bread rest in the pan for 10–15 minutes, then turn out onto a wire rack to cool completely. Enjoy warm or at room temperature.
