  • 2 cups chicken or vegetable broth Choose broth with no added sugars or starches.
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese Optional for extra creaminess.

Preparation

  • In a pot, melt butter over medium heat and sauté garlic until fragrant.
  • Add cauliflower and broth, then simmer until cauliflower is soft (about 15 minutes).
  • Blend the soup until smooth using an immersion blender.
  • Stir in heavy cream, salt, and pepper, then let it simmer for another 5 minutes.
  • Add cheese, stir until melted, and serve warm.
