Ingredients
  

Main Ingredients

  • 2-3 pounds beef stew meat Chuck roast or any stew meat, cut into bite-sized pieces.
  • 5-6 medium potatoes, peeled and chopped Cut into even chunks.
  • 4 carrots peeled and chopped Cut into even chunks.
  • 1 package dry onion soup mix
  • 1 tablespoon garlic, minced
  • 32 ounces beef broth
  • 6 ounces tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 3 pieces bay leaves
  • 1/4 cup flour For thickening the stew.

Preparation

  • Add all the ingredients, except the flour, into your Crockpot and stir to mix.
  • Cook on high for 5 to 6 hours or on low for 8 to 10 hours.
  • In the last 30 minutes of cooking, take 1/2 cup of broth from the pot and mix it with the flour to create a roux.
  • Pour the roux back into the stew and let it cook for another 30 minutes to thicken.
  • Remove the bay leaves before serving.

Notes

Serve with crusty bread or dumplings. Leftovers can be stored in the fridge for 3 to 4 days or frozen for up to 3 months.
