  • 150 grams granulated sugar
  • 120 grams unsalted butter Melted
  • 150 grams all-purpose flour Sifted
  • 1 teaspoon lemon zest

For Macarons

  • 120 grams almond flour Sifted
  • 150 grams powdered sugar Sifted
  • 3 large egg whites Aged
  • 50 grams granulated sugar
  • to taste ganache or buttercream for filling

Making Madeleines

  • Preheat the oven to 375°F (190°C) and grease a madeleine mold.
  • Whisk eggs and sugar until light and fluffy.
  • Fold in melted butter, flour, and lemon zest to form a smooth batter.
  • Spoon the batter into the molds and bake for 10–12 minutes until golden brown.
  • Let them cool slightly before dusting with powdered sugar.

Making Macarons

  • Sift together almond flour and powdered sugar.
  • Whip egg whites with granulated sugar until stiff peaks form.
  • Fold the dry ingredients into the meringue using the macaronage technique.
  • Pipe onto a baking sheet, let rest for 30 minutes, then bake at 300°F (150°C) for 12–15 minutes.
  • Once cooled, sandwich with ganache or buttercream filling.
