Ingredients
  

For Frying

  • Vegetable oil or shortening for frying, about 3 inches deep

Batter

  • cups all-purpose flour
  • ¼ tsp salt
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • ¼ tsp ground nutmeg
  • 2 eggs whisked until foamy
  • ½ cup heavy whipping cream
  • cups whole milk
  • 1 tsp vanilla extract
  • 4 tbsp salted butter melted
  • 2 tbsp vegetable oil or canola oil

For Serving

  • Powdered sugar for dusting

Instructions
 

  • Heat oil or shortening in a Dutch oven or deep frying pan to 375°F (190°C), about 3 inches deep.
  • In a large bowl, whisk together flour, salt, baking powder, sugar, and nutmeg.
  • In another bowl, beat the eggs until foamy. Add heavy cream, milk, vanilla extract, melted butter, and vegetable oil. Mix well.
  • Combine wet and dry ingredients until smooth (some small lumps are okay).
  • Using a ladle, carefully drop tablespoon-sized portions of batter into the hot oil. Fry until golden on one side, then flip and cook the other side.
  • Remove with a slotted spoon and drain on paper towels.
  • Dust with powdered sugar and serve warm.

Notes

Best served warm and freshly dusted with powdered sugar. For fun variations, add chocolate chips, cinnamon, or try savory versions with cheese and herbs. Store leftovers in an airtight container and reheat in the oven for a crisp texture.
