Ingredients
  

  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup milk dairy or plant-based
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
  • Stir in vanilla extract.
  • Divide batter evenly into cupcake liners, filling about 2/3 full.
  • Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before frosting.

Notes
