whole chicken
about 3–4 lbs, cleaned

water

celery stalks

peeled and halved

garlic

bay leaf
salt and black pepper

Instructions
🫧 Place the chicken in a large pot and cover with water (2 minutes).
🧅 Add all vegetables, garlic, ginger, bay leaf, salt, and pepper (5 minutes).
🔥 Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours until chicken is fully cooked and the broth is flavorful (2 hours).
🍗 Remove chicken from pot, shred the meat, and discard the bones (10 minutes).
🍲 Return shredded chicken to the pot, simmer for another 10 minutes.
🌿 Serve hot, garnished with fresh parsley.
Notes
This soup stores well and tastes even better the next day. Freeze leftovers for a ready-to-go remedy.
