Ingredients
  

Soup Base

  • 1 whole chicken about 3–4 lbs, cleaned
  • 10 cups water
  • 4 carrots chopped
  • 3 celery stalks chopped
  • 1 large onion peeled and halved
  • 4 cloves garlic crushed
  • 1 parsnip chopped
  • 1 small piece fresh ginger optional, sliced
  • 1 bay leaf
  • salt and black pepper to taste

Garnish

  • fresh parsley chopped

Instructions
 

  • 🫧 Place the chicken in a large pot and cover with water (2 minutes).
  • 🧅 Add all vegetables, garlic, ginger, bay leaf, salt, and pepper (5 minutes).
  • 🔥 Bring to a boil, then reduce heat and simmer uncovered for 1.5 to 2 hours until chicken is fully cooked and the broth is flavorful (2 hours).
  • 🍗 Remove chicken from pot, shred the meat, and discard the bones (10 minutes).
  • 🍲 Return shredded chicken to the pot, simmer for another 10 minutes.
  • 🌿 Serve hot, garnished with fresh parsley.

Notes

This soup stores well and tastes even better the next day. Freeze leftovers for a ready-to-go remedy.
