Preparation

  • Clean the lion's mane mushrooms by brushing off dirt.
  • For the sauté, heat olive oil or butter in a skillet.
  • Add the chopped mushrooms and cook until golden brown.
  • Season with salt, pepper, and garlic.

Soup

  • In a pot, blend sautéed mushrooms with vegetable stock and coconut milk.
  • Season with nutmeg and garnish with parsley before serving.

Crab Cakes

  • Combine shredded mushrooms, breadcrumbs, vegan mayo, Old Bay seasoning, and mustard.
  • Shape the mixture into patties.
  • Pan-fry the patties until crispy and golden.

Stir Fry

  • In a skillet, stir-fry the mushrooms with mixed vegetables.
  • Add soy sauce and cook until vegetables are tender.

Notes

Lion's mane mushrooms can be eaten raw but are best cooked to enhance flavor. Store leftovers in an airtight container for up to 3 days.
