Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts Opt for thighs for extra juiciness.
  • 4 cups chicken broth Homemade broth is preferred.
  • 1 cup heavy cream Provides a velvety texture.
  • 1/2 cup Parmesan cheese Freshly grated is best.
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1/2 cup sun-dried tomatoes
  • 2 cups spinach or kale Choose whichever leafy green you prefer.
  • 1 tbsp Italian seasoning A mixture of herbs.
  • 2 tbsp olive oil For sautéing.

Preparation

  • Dice the onion, mince garlic, and julienne the sun-dried tomatoes. Season the chicken with salt, pepper, and Italian seasoning.

Cooking the Chicken

  • Heat olive oil in a large pot over medium heat. Sear the chicken for 3-4 minutes on each side until golden brown, then set aside.

Building the Soup Base

  • In the same pot, sauté onion and garlic until translucent (about 2-3 minutes).
  • Pour in chicken broth and stir in sun-dried tomatoes. Simmer for a few minutes.
  • Reduce heat to low, add heavy cream and whisk until blended. Stir in Parmesan cheese and melt.

Putting It All Together

  • Return seared chicken to the pot and let it simmer in the creamy base. Add spinach or kale until wilted.
  • Once the chicken reaches an internal temperature of 165°F, shred it or cut it into bite-sized pieces and return to the soup.
  • Ladle the soup into bowls, garnish with freshly grated Parmesan, and serve with warm, crusty bread.

Notes

This soup can be made ahead of time. It tastes even better the next day. Adjust for dietary needs by substituting cream or cheese, or for low-carb options.
