Ingredients
  

Graham Cracker Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter melted

Filling

  • 14 oz sweetened condensed milk 1 can
  • 20 oz crushed pineapple drained, reserve a little juice if desired
  • 1/2 cup chopped pecans
  • 1/2 cup shredded sweetened coconut optional
  • 1/4 cup lemon juice
  • 8 oz whipped topping (Cool Whip) thawed

Decoration

  • extra whipped topping for decoration
  • pineapple chunks for decoration
  • maraschino cherries for decoration
  • chopped pecans for decoration

Instructions
 

  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press into a 9-inch pie dish to form a crust. Refrigerate for 30 minutes.
  • In a large bowl, stir together sweetened condensed milk, drained crushed pineapple, lemon juice, chopped pecans, and coconut (if using).
  • Gently fold in whipped topping until smooth and fluffy.
  • Pour filling into the chilled crust and smooth the top with a spatula.
  • Decorate with extra whipped topping, pineapple chunks, chopped pecans, and maraschino cherries.
  • Refrigerate for at least 4 hours, or overnight, until set. Slice and serve chilled.

Notes

For best results, chill the pie overnight to allow flavors to meld and the filling to firm up. You can also prepare the crust a day ahead to save time.
