  • 0.25 cup brown sugar

  • 1 egg yolk
  • 1 tsp vanilla extract

Instructions
 

  • In a bowl, beat the softened butter with brown and granulated sugar until creamy (2 minutes).
  • Mix in the egg yolk and vanilla extract until fully combined (1 minute).
  • In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add to the wet mixture and mix until a dough forms (2 minutes).
  • Fold in the mini chocolate chips until evenly distributed (1 minute).
  • Roll tiny bits of dough into small cereal-sized balls and place them on a parchment-lined baking sheet (10 minutes).
  • Preheat oven to 350°F (175°C). Bake for 6–8 minutes or until edges are lightly golden.
  • Let the mini cookies cool completely on a wire rack before serving with milk or yogurt.

Notes

These mini cookies can be stored in an airtight container for up to a week. For extra crunch, bake a minute longer and enjoy them as a topping on ice cream or smoothie bowls.
