Ingredients
  

Main ingredients

  • 4 cups cooked chicken, shredded Rotisserie chicken works great.
  • 1 can cream of chicken soup
  • 1 cup sour cream Can be substituted with Greek yogurt.
  • 2 cups shredded cheddar cheese Reserve some for topping.
  • 1 cup crushed Ritz crackers
  • 1/4 cup butter, melted For drizzling on top.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the shredded chicken, cream of chicken soup, and sour cream until well blended.
  • Stir in 1 cup of shredded cheddar cheese.
  • Spread the chicken mixture into a baking dish.
  • Top with crushed Ritz crackers and drizzle melted butter over the top.
  • Sprinkle remaining cheddar cheese on top.

Baking

  • Bake in the preheated oven for about 30 minutes, or until bubbly and golden.
  • Let it cool slightly before serving.

Notes

You can add steamed broccoli or peas for extra nutrition, or swap the cheese for pepper jack or gruyere for a different flavor. This casserole can be prepared ahead of time and refrigerated before baking.
