Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup crushed pineapple well-drained
  • 1/4 cup brown sugar packed
  • 1 tbsp unsalted butter melted
  • maraschino cherries halved (optional for garnish)

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, cream butter and granulated sugar until light and fluffy. Beat in the egg and vanilla.
  • In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry mixture into the wet mixture, mixing until combined.
  • Stir in the drained crushed pineapple until evenly distributed.
  • On the prepared sheet, sprinkle a little brown sugar where each cookie will be placed. Drizzle melted butter over the sugar.
  • Place spoonfuls of dough over the sugar-butter mixture. If desired, gently press half a cherry into the center of each.
  • Bake for 12–15 minutes, until edges are golden brown.
  • Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

✨ Drain pineapple very well to avoid excess moisture in the dough. These taste heavenly warm but are equally delightful the next day. 🌞
