  • 500 g Pork belly or ribs You can also use shrimp, fish, beef, or chicken.

Vegetables

  • 150 g Kangkong (water spinach) Adds a fresh flavor.
  • 100 g Radish Peeled and sliced.
  • 100 g Eggplant Chopped.
  • 100 g Okra Trimmed.
  • 2 pieces Tomatoes Diced.
  • 1 piece Onion Chopped.

Souring Agents

  • 100 g Tamarind Fresh or powdered form.

Preparation

  • Wash the pork or seafood thoroughly and cut into bite-sized pieces.
  • Peel and slice the radish, chop the kangkong, and dice the tomatoes and onions.
  • If using fresh tamarind, boil the pods, mash the pulp, and strain it for the juice.

Cooking

  • Sauté garlic, onions, and tomatoes until aromatic.
  • Add the protein and sufficient water to cover it, then simmer until tender (about 45 minutes for pork, 20 minutes for shrimp).
  • Stir in tamarind (or chosen souring agent) and adjust for taste.
  • Add vegetables based on cooking time, starting with radish and finishing with leafy greens.
  • Season with fish sauce or salt to enhance the umami.

Notes
