Ingredients
  

  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups self-rising flour
  • 1 tsp vanilla extract
  • 1 cup chopped pecans

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large bowl, beat together the granulated sugar, brown sugar, and eggs until well combined.
  • Add the vegetable oil and vanilla extract, mixing until smooth.
  • Gradually add the self-rising flour to the wet ingredients, mixing until just combined. Do not overmix.
  • Gently fold in the chopped pecans.
  • Pour the batter into the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
